Ingredients
- 250g butter
- 4 large eggs
- 250g Cooked beetroot
- 250 g Cane sugar
- ½ tsp. vanilla
- 175g plain chocolate chips
- 90 self raising flour
- 60g cocoa
Method
Chocolate? Yum and good for the soul. Beetroot? Yum and good for the bod. Chocolate and beetroot brownies? Apparently, yes.
- Blitz the beetroot in a food processor to a puree.
- Melt butter and mix in dry ingredients. Beat eggs and add to mix along with the beetroot puree.
- Line a 9 inch tin, pour in mixture. Bake at 150 for 30-40 mins.
