Sick of burgers and chicken - try some salmon on the BBQ, it's delish!
Ingredients:
- 4 x 8 oz salmon steaks
- 50ml guinness
- juice of 1 lime
- 2 tblsp vegetable oil
- 1 tsp dijon mustard
- 2 tsp fresh ginger
- 0.25 tsp finely chopped red chilli
- 1 tsp chopped coriander
- salt & pepper
- French bean salad
- blanched beans
- olive oil to coat
- shallots diced
- salt & pepper
Method:
- Place the salmon in a bowl and add all ingredients and mix them in.
- Leave to marinate for 3-4 hours or overnight.
- Turn in the marinade a couple of times.
- Pre-heat the barbeque and grill salmon 3 -4 minutes on each side.
- For the French bean salad, blanch and cool the beans, sweat the diced shallots off with olive oil and season with salt & pepper.
- Toss French bean, shallots & olive oil in a bowl, place on a plate and serve the warm grilled salmon steak on top.
