Sick of burgers and chicken - try some salmon on the BBQ, it's delish!

Ingredients:

  • 4 x 8 oz salmon steaks
  • 50ml guinness
  • juice of 1 lime
  • 2 tblsp vegetable oil
  • 1 tsp dijon mustard
  • 2 tsp fresh ginger
  • 0.25 tsp finely chopped red chilli
  • 1 tsp chopped coriander
  • salt & pepper
  • French bean salad
  • blanched beans
  • olive oil to coat
  • shallots diced
  • salt & pepper


Method:

  1. Place the salmon in a bowl and add all ingredients and mix them in.
  2. Leave to marinate for 3-4 hours or overnight.
  3. Turn in the marinade a couple of times.
  4. Pre-heat the barbeque and grill salmon 3 -4 minutes on each side.
  5. For the French bean salad, blanch and cool the beans, sweat the diced shallots off with olive oil and season with salt & pepper.
  6. Toss French bean, shallots & olive oil in a bowl, place on a plate and serve the warm grilled salmon steak on top.
