It's Tuesday and on the menu for Janice's DIY Lunch Plan is a warming sweet potato salad. Will work for any day, lunch or dinner. Make extra and keep the leftovers for the next day!

Method:

  1. Chop a sweet potato into cubes, and roast it in the oven, with seasoning and a coating of olive oil or coconut oil. It will take 30-45 minutes at 200°C, but check to make sure it’s soft.
  2. Once cooked, put in a bowl and leave to cool.
  3. Add some cubed feta cheese and baby spinach leaves.
  4. If you want some extra protein, you could add some sliced grilled chicken breast.
