It’s easy to spend too much money on lunch during the working week, even when we know that lunch made at home can be much nicer and more nutritious. So, in a bid to save some money and help you feel smug at the lunch table, here’s a meal that can be made in bulk and enjoyed during the week...
Today's lunch plan is the Scrumptious Salmon Salad.
Method:
- Grill your salmon fillets in the oven for about 5 minutes with some salt and pepper and some mixed dried herbs. A squeeze of lemon never went amiss either!
- Once cooked, flake them into a bowl with cooked and cooled couscous and sliced peppers.
- Add some sliced scallions and tomato and top it off with a drizzle of olive oil.
