Salmon Salad: Janice’s DIY Lunch Plan!

It’s easy to spend too much money on lunch during the working week, even when we know that lunch made at home can be much nicer and more nutritious. So, in a bid to save some money and help you feel smug at the lunch table, here’s a meal that can be made in bulk and enjoyed during the week...

Today's lunch plan is the Scrumptious Salmon Salad.

Method:

  1. Grill your salmon fillets in the oven for about 5 minutes with some salt and pepper and some mixed dried herbs. A squeeze of lemon never went amiss either!
  2. Once cooked, flake them into a bowl with cooked and cooled couscous and sliced peppers.
  3. Add some sliced scallions and tomato and top it off with a drizzle of olive oil.
