Chocolate? Yum and good for the soul. Beetroot? Yum and good for the bod. Chocolate and beetroot brownies? Apparently, yes.

Ingredients

  • 250g butter
  • 4 large eggs
  • 250g Cooked beetroot
  • 250 g Cane sugar
  • ½ tsp. vanilla
  • 175g plain chocolate chips
  • 90 self raising flour
  • 60g cocoa

Method

Chocolate? Yum and good for the soul. Beetroot? Yum and good for the bod. Chocolate and beetroot brownies? Apparently, yes. 

  1. Blitz the beetroot in a food processor to a puree.
  2. Melt butter and mix in dry ingredients. Beat eggs and add to mix along with the beetroot puree.
  3. Line a 9 inch tin, pour in mixture. Bake at 150 for 30-40 mins.
