Blinis are a great, easy-to-make dish which look impressive at any table when served with toppings such as Paul's suggestion here of smoked salmon and horseradish. Originally from Russia, they're made from buckwheat flour and are traditionally served with caviar - this version is a little less expensive!
Ingredients:
- 250ms warm milk
- 1 pkt dried yeast
- 175g buckwheat flour
- 1 1/2tsp salt
- 2 egg yolks
- 100ml crème fraiche
- 4 egg whites
- 1 tblsp of butter for frying
- Smoked Salmon
Method:
- Dissolve the dried yeast in the warm milk
- Add the dry ingredients and mix well
- Add the egg yolks and the crème fraiche and whisk well
- Put in a warm place for 20 mins
- Whisk egg whites to stiff peaks and fold into mix
- Melt the butter in a small nonstick pan
- When the butter is foaming drop a generous spoonful of the mixture into your pan
- Cook over a medium heat for 2 mins on each side
For the Horseradish crème fraiche:
Fold horseradish sauce into crème fraiche to taste
