Something for Muffin: Ones you'll want the kids to eat!

A clever way to get some veg, herbs or any other healthy alternatives into your kids snacks is with Michelle Darmody's savoury muffins from the Today show on RTÉ One.

Ingredients:

  • 120g of self raising flour
  • 100ml milk
  • 1 egg
  • 1 tablespoon of olive oil
  • 1 teaspoon baking powder
  • 120g of grated cheese, (I use cheddar or Comte)
  • Sun-dried tomatoes, crispy bacon bits, herbs, selection of nuts, seeds or whatever you're having yourself!

Method:

  1. Sift flour and baking powder together.
  2. Mix milk oil and egg together.
  3. Add to the flour.
  4. Add cheese and stir it in well.
  5. Spoon into 12 bun cases.
  6. Bake at 180 for twenty five minutes.
  7. You can add chopped sun-dried tomatoes, crispy bacon bits, or chopped herbs.
