Tofu is a great source of protein and can be extremely tasty if cooked correctly. This Op Trans recipe is delicious and filling too.

Ingredients:
- 1 ½ tablespoon curry paste (45g)
- 1 bunch Coriander leaves
- 1 ½ tablespoon rice vinegar
- ½ can light coconut milk (200g)
- 200g firm tofu, drained & cubed
- 170g pak choy
- 100g bamboo shoots, canned
- 2 tablespoon lower sodium soy sauce
- 60g brown rice,
- 5g unsalted chopped nuts
Method:
1. Place rice in a pot of water, bring to boil. Reduce heat and allow to simmer until light and fluffy.
2. In a bowl add the coriander, curry paste, rice vinegar, and coconut milk. Use a hand blender to blend until smooth.
3. Place the curry mixture and tofu in a wok and bring to the boil. Stir gently.
4. Add bamboo shoots, pak choy, and 1 ½ tsp soy sauce. reduce heat to medium and allow to simmer for 5 - 6 minutes.
5. Serve the curry with rice.
6. Drizzle each serving with remaining soy sauce and sprinkle with nuts.
