Arun Kapil is cooking up a chicken storm on the Today show on RTÉ One - sofa chicken, spiced, floured and fried and then he adds Cauliflower Chips to throw some veggies in the mix.
Spiced, floured & fried
Ingredients:
500g boned & skinned chicken thighs - cut into long lozenges, all gristle and sinew removed.
Crisp Crumb:
Ingredients:
- 200g potato starch, or corn flour is fine
- 200g instant polenta
- zest of half an un-waxed lemon, fine grated
- 1 tsp thyme leaves, picked
- Good amount of sunflower oil for deep frying
- Spiced Salt
Spices:
- ½ tsp smoked paprika
- 1 tsp cayenne pepper
- ½ tsp fresh thyme
- 1 tsp fine sea salt and mix together well
Ingredients:
Spices: 2 tsp black pepper corns, 1 tsp coriander seeds, 1 tsp fennel seeds, seeds of 1 green cardamom pod all finely ground and 3 tsp sea salt all mixed together well
Method:
1. Place all the Crisp Crumb ingredients in a bowl mix well. Pop the chicken pieces into the Crumb bowl, dredge and mix well, then set aside on a wire rack.
2. Meanwhile, pour the oil into a deep pan, or an electric *deep fat fryer set to 170°C.
3. Next, pick up individual chicken pieces with kitchen tongs, and gently place them into the fryer. Don’t crowd the chicken, cook in two or three batches as required.
4. Deep fry until crisp and golden allow about 4 to 6 minutes depending on the thickness of the chicken.
5. Once cooked through, remove and sprinkle liberally with the spiced salt, serve immediately or set aside and keep warm whilst you finish off the cauliflower.
