This aromatic and filling stew is perfect to make on a chilly January evening. The protein and complex carbs give adzuki beans a low GI, which keeps blood sugar stable and helps fight fatigue.

Ingredients

  • 200g chorizo, roughly diced
  • 500g skinless boneless chicken thighs, cut into chunks
  • 1 onion, finely chopped
  • 1 small red chilli finely sliced and seeds removed
  • 2 garlic cloves crushed
  • 1 tsp smoked paprika
  • 1 tsp tumeric
  • 200ml chicken stock
  • 400g tinned chopped tomatoes
  • 1 tbsp tomato purée
  • 400g drained tinned adzuki beans
  • 200g roughly chopped kale leaves
  • Sea salt and freshly ground black pepper
  • Steamed brown rice to serve

Method

This aromatic and filling stew is perfect to make on a chilly January evening. The protein and complex carbs give adzuki beans a low GI, which keeps blood sugar stable and helps fight fatigue.

  1. Start off by pan frying the chorizo over a gentle heat, the chorizo will release oil as it cookf, remove the cooked chorizo from the pan and pop into a casserole saucepan with a lid.
  2. Then fry the chicken in the chorizo oil until lightly coloured on all sides. This can be done in batches. Once the chicken is ready, put in the casserole with the chorizo.
  3. Next add the onion chilli and garlic to the pan and cook until soft, add the smoked paprika and turmeric and and cook for a further minute then transfer to the casserole along with the other ingredients.
  4. Place the casserole over a medium heat and add the chicken stock, tomatoes, beans and puree, cook over a gentle heat for 30 minutes, then just before serving add the kale and pop on the lid of the casserole, the kale will steam cook in the casserole this will take about 5 minutes.
  5. Serve with brown rice.
