Ah the Christmas ham. However you may not recognise it by the time Paul Flynn is finished caramelising, syruping, spicing and mustarding that bad boy on the Today show on RTÉ One. Your ham will taste like Christmas itself and no need for cola in this one.
Ingredients:
- 4kg piece of ham (approx 1/2 ham)
- I btl maple syrup (330g)
- 3 tbsp Dijon mustard
- I tsp allspice or mixed spice
- 3 tbsp brown sugar
Method:
- Place the ham in a large saucepan and cover with cold water.
- Place a lid on the saucepan, bring to the boil, then reduce the heat and simmer for approximately 2 1/4 hours.
- When the ham is cooked, cut the skin off with a sharp knife then score the fat into diamonds.
- Preheat the oven to 200 degrees.
- Transfer the ham to a roasting tin with 400 mls of cooking water.
- Brush the ham evenly with the mustard and sprinkle over the spice and sugar.
- Baste the ham with the cooking water just to moisten the sugar then place in the hot oven for 20 minutes, drizzle the maple syrup evenly over the ham and put back in the oven for a further 10-15 minutes until you get a lovely rich glaze, remove from the oven and spoon the roasting juiced over the ham to form a sticky wonderful glaze.
