A tasty lunch or supper - a crisp green salad is the perfect accompaniment!


  • 6 floury potatoes, peeled.
  • Knob of butter
  • 2 or three bacon rashers, cut into chunks
  • 1 small onion, sliced
  • 150ml white wine
  • 400ml cream
  • 1 small ripe Durrus cheese or Blue Cheese


  • Pre heat the oven to 180C.
  • Steam the potatoes until about ¾ done. Reserve.
  • Heat the butter and sweat the onions, add the bacon chunks and cook until golden. Deglaze with the white wine, give it all a good stir. Add the cream and heat through.
  • Slice the potatoes into a gratin dish.
  • Pour in the cream and move the potatoes so it goes around them.
  • Slice the cheese and lay it on top.
  • Bake in the oven for 20/25 minutes until it’s golden & crispy on top.
  • Serve with fresh salad leaves.
