A tasty lunch or supper - a crisp green salad is the perfect accompaniment!
Ingredients:
- 6 floury potatoes, peeled.
- Knob of butter
- 2 or three bacon rashers, cut into chunks
- 1 small onion, sliced
- 150ml white wine
- 400ml cream
- 1 small ripe Durrus cheese or Blue Cheese
Method:
- Pre heat the oven to 180C.
- Steam the potatoes until about ¾ done. Reserve.
- Heat the butter and sweat the onions, add the bacon chunks and cook until golden. Deglaze with the white wine, give it all a good stir. Add the cream and heat through.
- Slice the potatoes into a gratin dish.
- Pour in the cream and move the potatoes so it goes around them.
- Slice the cheese and lay it on top.
- Bake in the oven for 20/25 minutes until it’s golden & crispy on top.
- Serve with fresh salad leaves.
