This is a very quick and tasty dish and a great way to get your kids to eat spinach.
Ingredients
- 2 large chicken fillets (approx 300g)
- 400g fresh spinach, chopped or frozen leaf spinach
- 4 tblsp vegetable oil
- 1 tsp ajwano seeds (lovage seeds)
- ½ tsp turmeric powder
- 1 tsp salt or to your taste
- 1 dried or fresh chilli
- 2 cloves of garlic, peeled and crushed
- 1 tsp peeled and crushed ginger
- 2 tomatoes, finely chopped
- 1 tsp cumin and coriander powder
- For the Raita:
- 4 tblsp natural yoghurt
- 1 cup grated cucumber
- 1 tsp chat masala or 2 tsp fresh roasted cumin powder with salt
- pinch of chilli
Method
This is a very quick and tasty dish and a great way to get your kids to eat spinach.
- Heat the oil in a pan and once it begins to smoke add ajwano seeds and fry for 5 seconds.
- Add chilli, chicken with turmeric powder, turmeric powder and salt and cook for 2-3 minutes until chicken is cooked.
- Now add garlic, ginger, tomato , cumin coriander powder and give it a good stir.
- Add spinach and cook for about another few minutes.
- Your tasty and healthy chicken spinach dish is now ready to serve with basmati rice or naan bread and raita.
