Spiced pork ribs, slow cooked with orange and cider and green cabbage slaw. Delicious!
Ingredients
- 4 pork ribs
- juice of two oranges
- 1 bottle of cider
- 1 cup spices
- 1 tblsp brown sugar
- 1 tsp tomato paste
- 2 bay leaves
- 1 sprig rosemary
- 1 sprig thyme
- 2 tblsp honey
- 2 tblsp dijon mustard
- 1 small head of green cabbage, finely shredded
- 2 tablespoons olive oil
- 1 tablespoon chardonnay vinegar
Method
- Toss the pork ribs in the spices and marinate overnight in a sauce pot. Heat all of the other ingredients and simmer for ten minutes. Place the pork ribs in a deep oven-proof dish. Add the liquid and cover dish with tin foil and a lid.
- Slow cook in oven for 2/3 hours at 140C until tender. Remove ribs and if the liquid is a little thin, reduce until thickened.
- Mix all ingredients and season with sea salt and freshly ground black pepper.
