Bananas and apples top the pile of food waste offenders…These fruits may bruise easily, but avoid hurting their feelings by using them in this banana and apple chip recipe, which make the perfect lunch box addition.
Ingredients
- 2 ripe bananas
- 1 apple
- juice of 2 lemons
Method
- Peel bananas and slice thinly.
- Slice the apple in half and slice thinly.
- Squeeze the lemon juice into a bowl.
- Cover two baking trays with parchment paper. Layer all of the fruit slices on the baking trays.
- Brush the banana and apples with the lemon juice.
- Bake in the oven at a very low heat (100c/80c fan/ gas mark 1) for 1 hour and 45 minutes until the bananas have started to caramelize and the apples are dried but not burnt.
- Remove from baking paper and allow to cool on chopping board.
- Store some in storage jars. Wrap up a handful of dried fruits in paper and twine for a lunch box treat.
