This is a very popular dish which goes very well with pilau rice. I use this as a bread or wrap spread for cheese and ham sandwiches which gives that extra flavour and variation to the ordinary sandwich! You can even use this dish as a sauce for your pasta or spaghetti.

Ingredients

  • 2 tblsp vegetable oil
  • 0.5 tsp turmeric powder
  • 0.25 tsp asafoetida powder (optional)
  • 8-10 fresh salad tomatoes or 400gm or one tin of canned tomatoes (blend before you cook to give smooth sauce
  • ¾ tsp of salt or to your taste
  • 1 fresh green chilli split into half or ½ tsp of chilli powder
  • 0.5 tsp plain masala (cumin and coriander powder)
  • 0.5 tsp grounded szechwan pepper
  • 2-3 cloves of garlic, peeled and crushed
  • 1 tsp peeled and chopped ginger
  • handful of fresh finely chopped coriander/chive

  1. Heat oil in a small pot (preferably non-stick). Once oil is hot add blended tomato with turmeric powder, asafoetida, chilli, plain masala and salt.
  2. Cover and cook in a medium heat for about 5 minutes or until tomato becomes thick paste, stirring to avoid burning. Once it becomes a thick paste, add garlic ginger and Szechwan pepper and cook for about 1 minute.
  3. Finish the dish with handful of fresh chopped coriander or chive.
