Warm New Potato, Chorizo & Goat’s Cheese Salad

A beautiful savory salad recipe from Lidl

Ingredients

  • 14 cooked new potatoes (650g), skin on and cut in half
  • 0.5 dulano chorizo sausage (125g), peeled and cut into
  • chunks
  • 2 red onions (280g), peeled and sliced
  • 3 garlic cloves (10g), peeled and chopped
  • 100g meadow fresh baby leaf spinach
  • 60mls primadonna extra virgin olive oil
  • 180g petit chebra goat’s cheese, sliced thickly
  • chantesel salt and kania black pepper

Method

  • Heat the oil and add the potatoes, cooking for 3-4 minutes over medium heat.
  • Add the onions and garlic, followed by chorizo a minute later. If the mixture looks a little on the dry side add another splash of olive oil.
  • Cook everything for 5 – 6 more minutes turning occasionally.
  • Add the spinach and seasoning.
  • Serve hot with the goat’s cheese on top which should start to melt into the salad.
