A beautiful savory salad recipe from Lidl
Ingredients
- 14 cooked new potatoes (650g), skin on and cut in half
- 0.5 dulano chorizo sausage (125g), peeled and cut into
- chunks
- 2 red onions (280g), peeled and sliced
- 3 garlic cloves (10g), peeled and chopped
- 100g meadow fresh baby leaf spinach
- 60mls primadonna extra virgin olive oil
- 180g petit chebra goat’s cheese, sliced thickly
- chantesel salt and kania black pepper
Method
- Heat the oil and add the potatoes, cooking for 3-4 minutes over medium heat.
- Add the onions and garlic, followed by chorizo a minute later. If the mixture looks a little on the dry side add another splash of olive oil.
- Cook everything for 5 – 6 more minutes turning occasionally.
- Add the spinach and seasoning.
- Serve hot with the goat’s cheese on top which should start to melt into the salad.
