A tasty, chicken and nutty barley soup.. with carrots and onions.. a winter warmer
Ingredients
- 1 [chicken] breast, sliced thinly
- cup of [barley], soaked overnight in water
- 1 large [onion], chopped
- 3 [carrot]s, sliced
- 1 chicken stock
- 1 clove of garlic
- 1 table spoon of olive oil
- salt and pepper
Method
- Fry garlic, onions and chicken, in olive oil
- Make up 1 pint of chicken stock
- Add in sliced carrots chicken and onions and garlic and cup of barley
- Simmer for 30 minutes
- Season with salt and pepper to taste

For a bit more of a kick add in a some chili flakes
