A simple and quick dish from Martin Shanahan.


  • 1 trout
  • 2 knobs of butter
  • 1 bowl of peas
  • 1 tea spoon of sugar


  1. Make sure your pan is hot.
  2. Add a knob of butter and a spoon full of sugar to the peas and simmer.
  3. Skin the Trout and season the fish with some salt.
  4. Add to pan until there is a crisp coating on the trout.
  5. Serve with some potatoes and peas to the side.
