A tasty fish recipe of baked bream topped with a lime flavour.
Ingredients
- 1.25 kg sea bream (scaled, cleaned and gutted)
- 25 g butter
- 1 onion medium (sliced)
- 3 tomatoes (halved)
- 2 tblsp fish stock
- 100 ml water
- 4 tblsp fresh lime juice
- 1 tblsp fresh white breadcrumbs
- 1 tblsp capers (chopped)
- 3 tblsp olive oil
- to garnish:
- 1 lime (halved) and parsley sprigs
Method
- Put the fish in an ovenproof dish, and melt the butter in a heavy-based frying pan.
- Add the onion and sauté for about 15 minutes over a low heat until soft and golden brown. Arrange the onion and tomatoes around the fish and then pour over the fish stock, water and lime juice.
- Sprinkle the breadcrumbs, chopped capers and olive oil over the top and bake in a preheated oven, 180°C (350°F/Gas 4) for 40 – 45 minutes, basting occasionally.
- Garnish with lime halves and parsley sprigs, and serve straight away.
