Derry Clarke shows you how to prepare a noodle salad with a spicy kick as part of 'Eat Smart Week'.
Ingredients
- 200 g cooked noodles
- 100 g bean sprouts
- 1 cucumber (diced)
- 1 tblsp chopped mint
- 1 tblsp chopped coriander
- 4 red chillies (de-seeded and finely diced)
- 2 lemons (juice)
- 2 tblsp soy sauce
Method
- Toss all ingredients together, and season to taste.
