Step aside, 99 cones. TikTok star Cian Mooney has just changed the dessert game in Episode 2 of Look Who's Hangry with a dish that shouldn’t work but absolutely does.

Introducing: Pistachio & Sun-Dried Tomato Deep-Fried Ice Cream Bombs. A golden, crunchy, hot-and-cold flavour explosion born out of cravings, chaos and a little bit of culinary madness. It’s the kind of creation that could only exist in Look Who’s Hangry, the new RTÉ Player Original series in partnership with Heinz and hosted by chef and TikTok star Daniel Lambert.

In Episode 2, Cian Mooney takes on Callyann Brennan with this unexpected dessert that instantly had Chef Daniel and the entire crew doing a double take. Blending the creamy sweetness of pistachio ice cream with the umami punch of sun-dried tomatoes, then crumbed and deep-fried to perfection, Cian's creation proves that when it comes to food, weird can be wonderful.

Cian Mooney's Deep-Fried Pistachio & Sun-Dried Tomato Ice Cream Bombs

Serves: 2

Ingredients:

  • 300g pistachio ice cream
  • 50g sun-dried tomatoes
  • 2 eggs
  • 100g panko breadcrumbs
  • Zest of 1 lemon
  • Sea salt to taste
  • Oil for deep frying
  • 100g crushed pistachios (for garnish only)

Method:

Blend & Freeze: Blend the sun-dried tomatoes into the pistachio ice cream. Scoop into small balls and freeze until solid.

Crumb & Chill: Dip each frozen ball into beaten egg, then roll in panko breadcrumbs. Freeze again for 30 minutes to firm up.

Fry & Finish: Heat oil and carefully deep-fry each bomb for 1 to 2 minutes until golden. Drain on kitchen paper.

Serve with Style: Plate with a sprinkle of lemon zest, a pinch of sea salt and a dusting of crushed pistachios. Serve immediately.
