Indulgent Orange Panna Cotta with Wade Murphy as seen on the RTÉ Today Show.
Ingredients:
Panna Cotta:
- 480 mls whipping cream
- 120 mls full fat milk
- 120g caster sugar
- 1 leave gelatin
- Zest and juice of 1 orange
Soak the gelatin in ice water for a couple of minutes. Place all other ingredients in a pot and bring to the boil. Stir until all the sugar has dissolved. Squeeze all the water from the gelatin leaf and add to the cream and whisk until it has dissolved. Pass through a sieve and then pour a not glasses and allow to set for at least 4 hours. While the panna cotta is setting make the orange jelly for the top.
Orange Jelly:
- 125mls Orange juice
- 5g caster sugar
- 1 leaf gelatin
Soak the gelatin in ice water to soften. Combine the juice and sugar in a pot and bring to the boil. Remove from the heat and whisk in the gelatin. Pass through a sieve and allow to cool to room temperature before pouring on top of the set orange custard. Place in the fridge till the jelly is set.
To Serve:
- 15 Orange segments
- Chocolate shavings
- 5 sprigs mint
Remove from the fridge and garnish with some chocolate shavings and orange segments. If you had orange sorbet, even better again. Place a sprig of fresh mint on top of each glass and serve.
