McCarthy, younger brother of Joe, came through the Leinster academy and joined the senior ranks ahead of the 2024/25 season.
He played on the Ireland Under-20 team that won a Grand Slam in 2023 and reached the final of the World Rugby Championship.
McCarthy, a Senior Schools Cup winner with Blackrock, played four times for Leinster last season.
