McCarthy was largely unknown when he made his Leinster debut against Cardiff in January 2022, but within six months he was playing in the final of the Champions Cup, and bound for New Zealand with the Ireland squad.
The Dubliner played 35 times for Leinster ahead of the 2024/25 season.
Featured for Ireland at the RWC 2023 and won the 2024 Six Nations with Andy Farrell's side.
