Pancakes

Ingredients:

½ cup wholemeal flour

½ cup self raising flour

1 cup full fat milk

1 egg

Knob of unsalted butter

To serve:

Mixed Berries

Lemon

Sugar

Yoghurt

Cook time: 15 minutes Makes: 4 Adult portions

Method:

Whisk the flour, milk and eggs together until smooth.

In a large frying pan, melt the butter over a medium heat.

Add the pancake mixture, one spoonful at a time. Cook until you see bubbles rising to the top. Flip over and cook on the other side for two minutes further.

Pancakes

Perfect pancakes:

Ingredients:

Plain Flour 300g

Milk 175ml

Pinch of Salt

2 Eggs

Distilled Vinegar 2tbsp

Baking Powder 1tsp

Castor Sugar 70g

Method:

1. Mix all your dry ingredients in a large mixing bowl with a whisk.

2. In a separate jug beat your milk, eggs and vinegar together.

3. Add your wet ingredients to your dry ingredients and whisk together until smooth.

4. Heat a non stick pan to medium/high heat.

5. Ladle in 125ml of pancake mix into the pan.

6. Once the pancake is cooked on one side, give it a flip.

7. The pancake should spring away from the pan at this stage and look nice and fluffy.

8. Once the pancake is fully cooked, remove from the heat and place on a plate.

9. Repeat the process until you have a fat stack of pancakes.

10. Serve with your toppings of choice (I like maple syrup and butter).

Healthyish Pancakes (that don't taste healthy)

Ingredients:

Plain Flour 100g

Wholemeal Flour 150g

Porridge oats 50g

Oat Milk 200ml

Pinch of Salt

1 egg

1 ripe banana, smashed

Distilled Vinegar 2tbsp

Baking Powder 1tsp

Maple Syrup 2tbsp

Method:

1. Mix all your dry ingredients in a large mixing bowl with a whisk.

2. In a separate jug beat your oatmilk, eggs and vinegar and banana together.

3. Add your wet ingredients to your dry ingredients and whisk together until smooth.

4. Heat a non stick pan to medium/high heat.

5. Ladle in 125ml of pancake mix into the pan.

6. Once the pancake is cooked on one side, give it a flip.

7. The pancake should spring away from the pan at this stage and look nice and fluffy.

8. Once the pancake is fully cooked, remove from the heat and place on a plate.

9. Repeat the process until you have a fat stack of pancakes.

10. Serve with your toppings of choice, yogurt, nut butter and fruit go great for this recipe.
