Salmon and Avocado rice bowl

Ingredients:

Avocado, chopped x 2

Scallions chopped x 4

Sugar snap peas chopped x 100g

Cream cheese x 50g

Hot smoked salmon x 4 fillets

Zest and juice of 1 lime

Dashi seasoning powder or salt to taste

Sesame seeds and hot sauce to finish (optional)

Brown and white rice blend - 2 cups uncooked

Method:

Wash and cook your rice using your preferred method. A pot with a lid or rice cooker is ideal.

In a large bowl, mix all of your ingredients together, breaking the salmon into chunky pieces with a fork.

Serve salmon mixture a top of rice, garnishing with sesame seeds and hot sauce if liked.

Prawn Burgers

Ingredients:

1 small onion

2 carrots, washed

180g raw peeled prawns

1 egg

30g plain flour

Small splash of cream

1T olive oil plus more for frying.

Method:

1. Blend everything together in a food processor until smooth. Alternatively, finely chop the onions and prawns, grate the carrot and mix everything together with the rest of the ingredients.

2. Heat some olive oil in a frying pan and scoop out one tablespoon and mixture onto the pan and flatten it slightly. Colour on one side and flip.

3. Once cooked, remove from the pan and repeat until all of the mixture is used.

4. I normally chill them in the fridge before freezing. They defrost and re-heat very quickly in the microwave.

5. Serve as finger food or mashed up.

Blueberry and Banana Pancakes

Ingredients:

Plain Flour 300g

Milk 300g

Pinch of Salt

2 Eggs

Distilled Vinegar 2tbsp

Baking Powder 1tsp

Castor Sugar 70g

Mashed Banana x 1

Blueberries x 100g

Method:

1. Mix all your dry ingredients in a large mixing bowl with a whisk.

2. In a separate jug beat your milk, eggs, vinegar and banana together.

3. Add your wet ingredients to your dry ingredients and whisk together until smooth. Fold in blueberries.

4. Heat a non stick pan to medium/high heat.

5. Ladle in 125ml of pancake mix into the pan.

6. Once the pancake is cooked on one side, give it a flip.

7. The pancake should spring away from the pan at this stage and look nice and fluffy.

8. Once the pancake is fully cooked, remove from the heat and place on a plate.

9. Repeat the process until you have a fat stack of pancakes.

10. Serve with your toppings of choice (you can't go wrong with maple syrup)
