Garlic, Ginger & Lime Airfryer Cod Parcels

Equipment: Airfryer, & baking paper
Ingredients:
2 boneless cod fillets (or any fish you like)
2 cloves garlic (finely grated or minced)
1-inch piece of fresh ginger (peeled and grated)
1 lime (zest and juice)
1 tbsp soy sauce
1 tbsp olive oil or sesame oil
1 tsp honey
1 small red chilli (finely sliced – optional for a little kick)
Salt & black pepper, to taste
Fresh coriander or parsley, to garnish
To Prepare: 1. Make the marinade: In a small bowl, combine: Grated garlic Grated ginger Lime zest and juice Soy sauce Olive oil Honey Sliced chilli (if using) Mix well.
2. Prep the cod: Pat cod fillets dry with kitchen paper. Season lightly with salt and black pepper. Spoon the marinade over each fillet, ensuring they are well-coated. Let it sit for 5–10 minutes to soak in the flavours (longer if you have time).
3. Prepare the parcels: Tear two large squares of baking paper Place the cod fillet on the baking paper Spoon over any remaining marinade. Fold the parcels up tightly, sealing the edges so steam stays in.
To Cook (Airfryer):
1. Place parcels in the airfryer basket (you can do both at once if there's space, or cook in two batches).
2. Cook for 12–15 minutes depending on the thickness of the fillets. The cod should be opaque and flake easily with a fork To Serve: Carefully open the parcels (be careful of the steam). Serve directly in the parcel or plate it up with steamed rice, couscous, or salad. Garnish with fresh coriander and an extra wedge/slices of lime.
Airfryer Sharing S'mores Dip (with Digestive Biscuit Dippers)

Prep Time: 5 minutes
Cook Time: 6–8 minutes
Equipment: Airfryer, heatproof dish (to fit in your airfryer basket)
Ingredients:
100g milk chocolate (chopped or chocolate chips)
50g dark chocolate (for balance – optional)
12–15 large marshmallows (or a large handful of mini marshmallows) 1–2 packs of digestive biscuits (for dipping)
Optional: A drizzle of salted caramel or Nutella (for topping after cooking)
Instructions:
1. Prep your dish: Use a small round or square oven-safe dish (ceramic or metal) that fits in your airfryer basket. Lightly grease it with butter or spray oil to make cleanup easier.
2. Layer the chocolate: Add the chopped chocolate/chocolate chips to the base of the dish. Spread them out evenly to create a chocolatey base layer.
3. Add the marshmallows: Arrange the marshmallows on top of the chocolate. Cover the entire surface – they’ll puff up and toast beautifully.
4. Airfry: Place the dish in the airfryer basket. Cook for 6–8 minutes, or until the marshmallows are golden, puffed, and slightly toasted. (Keep an eye on them from the 6-minute mark – they brown quickly!)
5. Serve: Carefully remove the dish (it’ll be hot!). Let it sit for 1–2 minutes – the chocolate will be melted and gooey underneath. Serve warm with digestive biscuits for dipping.
Optional Extras: Add a sprinkle of sea salt before airfrying for a salted s’mores twist. Use flavoured chocolate (orange, mint, etc.) for a fun variation. Swap in chocolate-covered digestives for next-level dipping!
