Brownie Balls - makes 9 balls

1 cup dried dates - 20 approx (or Medjool dates, pitted)

2 tbsp oat flour or ground almonds (I blended oats in my smoothie blender)

2 tbsp nut butter, I used almond , peanut butter, cashew or biscoff as a nut butter alternative

2 tbsp honey or maple syrup1 tbsp ground seeds or protein powder

1.5 tbsp cocoa powder

1 tsp vanilla extract

Pinch salt

½ cup puffed rice cereal

To coat

100g chocolate melted (milk or dark)

¼ cup puffed rice cereal

If using dried dates, soak them in boiling water for 5 minutes, then drain and discard the water - to get them nice and soft. Then add them to the blender along with the other ingredients except the puffed rice cereal. Blend until nice and smooth. Add in the puffed rice, blend again briefly. (if using medjool dates add them straight to the blender)

Divide into 9 equal balls

Chill in the fridge for 10 minutes.

Melt the chocolate (gently in the microwave or in a bowl over simmering water), stir in the puffed rice. Then coat each ball with chocolate. Chill for 20 minutes and devour!!

Storage: Good for 5 days in the fridge or air tight container in the cupboard.Freezer for 3 months..defrost in an hour at room temp.
