Black Pepper Beef Stir Fry
Ingredients
- 220g sirloin steak (sliced into thin pieces)
- 95g Dried Fine Egg Noodles( approximately 1 nest)
- 1 red onion thinly sliced
- ½ red pepper
- ½ green pepper
- 2 cloves of garlic thinly sliced
- 4 sprigs of spring onion cut in 2cm pieces and julienned.
Marinade
- 1 tbsp soy sauce
- ½ tbsp Shaoxing rice wine (Chinese Cooking Wine)
- 1 tsp sugar
- 1 tbsp cornflour
- 1/2 tsp of bicarbonate of soda
- ¼ tsp white pepper
Sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tbsp Shaoxing rice wine
- 1 tbsp dark soy sauce
- 1/2 tbsp white rice vinegar
- 2 tsp sugar
- 1tsp of coarse black pepper
Method
In a bowl, add the sliced beef and marinade ingredients, mix well and set aside in the fridge.
Prepare and chop all the vegetables and lay them on a plate.
In another bowl, mix together all the sauce ingredients and set aside.
Place the egg noodles in a large bowl and soak in some boiling hot water for 2 minutes with a lid on and strain through a sieve.
In a wok, add some oil, then the garlic and onions. Stir fry for 20 seconds and add the marinated beef and further stir fry on medium heat for 3 minutes.
Now add the red and green peppers and stir fry for a further 3 to 4 minutes, then add the noodles, spring onion and sauce mix. Stir fry for 2-3 minutes. Ready to serve. Serves 2.
Chicken Fried Rice
Ingredients
- 2 cloves of garlic
- 2cm piece of fresh ginger
- 2 banana shallots
- 300g cooked jasmine rice
- 2 eggs, beaten
- 80g cooked chicken
- 1 finely chopped scallion (optional)
- 1 finely chopped red chilli (optional)
Seasoning
- 2 tbsp soy sauce
- 1 tsp sesame oil
- ¼ tsp white pepper
- 1 tbsp oyster sauce
- ½ tsp of Mushroom powder (optional)
Method
Finely chop the garlic, ginger and shallots.
In a hot wok, add 2tbsp of oil, stir fry the garlic, ginger and shallots for 2-3 mins
Add in the beaten egg, stir fry on low heat for 20seconds and when the egg is still runny, add in the cooked rice and chicken. Stir together well for 2-3minutes.
Season with light soy, sesame oil, white pepper, oyster sauce and mushroom powder.
Sprinkle and garnish with chopped scallion and red chilli.
Ready to serve.
Stir fried Pak Choi with Garlic
Ingredients
- 2 tbsp neutral oil
- 300g baby green pak choi
- 3 garlic cloves, finely sliced
- Salt and white pepper, to taste
- 1/2 tsp sugar
- Drizzle of Chinese light soy sauce
Method
In a medium sized wok, heat the oil. When it is hot, add the garlic and gently stir fry for 30seconds.
Add your pak choi, 2-3 tbsp of water and cover with a lid. This will help keep the green a lovely vibrant colour. Let is cook for 2-3minutes until the pak choi is nice and tender.
Season with some salt, white pepper, sugar and soy sauce.
Ready to serve. Serves 2.
