(Serves 4)

40 g butter

1 red onion, peeled and very finely diced

10 cherry tomatoes, chopped into quarters

8 eggs

100 g baby spinach

Salt & pepper

Sweat the butter and onion together until very soft. Season well. Then add the tomatoes, then the beaten egg. When starting to solidify, add the spinach and fold in. Taken off the heat and let the residual heat cook the spinach and finish off the eggs. Season and serve.
