Simple Hot Sauce

Ingredients

  • Malt vinegar - 200 ml
  • Habanero chillis - seeds and all - 5 qty
  • Cloves of garlic - 5 qty
  • Sea salt - 3g

Preparation

In the blender to the consistency that you like. You can eat it fresh or cook it to 82 degrees C to last a little longer. Fresh will last a few weeks and cooked will last a few months.

This is a starter recipe to which you try adding Fruit like peaches or mango if you like sweeter things. You can add onions or shallots and carrots if you like more savory things. But think about what you like to eat that is spicy and go from there.

Simple Chicken Wing Recipe

Ingredients

  • 1 Part Salted Butter approx 50g
  • 1 Part your favourite hot sauce 50g
  • 1 Lime
  • 500g Chicken Wings
  • Salt

Preparation

Melt butter in a pan and add hot sauce and mix. It does not need to boil. Just a light saute until it is combined. Turn off and let cool while the wings are cooking.

Clean wings with cold tap water and pat dry or leave on a rack to air-dry. Put in your air fryer or oven at the hottest setting until crispy, usually 30-40 mins. Once cooked, place immediately in the cold pan with the sauce/butter combo and toss. A squeeze of fresh lime can go a long way for sweeter hot sauces.
