And now, a recipe straight from the great Giacomo Puccini himself—yes, the man behind some of the world's most beloved operas also had a way with beans.
This is Puccini’s beans.
You’ll need one kilo of cannellini beans, two to three whole heads of garlic—just slice a little off the top to reveal those cloves—and four or five fresh sage leaves.
Now, imagine Puccini writing this in a letter, almost like a musical score:
"Place the beans on the fire in cold water—not too much, not too little. Let them simmer gently for two hours. By the end, there should be just a few spoonfuls of liquid left."
As they cook, add your sage, the garlic, a touch of salt and pepper… and halfway through, a drizzle of oil to enrich the melody.
Simple, rustic, and quietly dramatic—just like Puccini’s music.
