They're fresh, creamy, and slightly indulgent, like a mini cheesecake without the fuss!

Easy Strawberry Cream Cheese Bites

Ingredients:

10–12 large fresh strawberries, hulled

4 oz (115g) cream cheese, softened

2 tablespoons powdered sugar (or honey, if you prefer)

1/2 teaspoon vanilla extract

Optional: chocolate chips, or crushed pistachios for topping

Instructions:

Prep the Strawberries

Wash and hull the strawberries.

If they're big and stable enough, turn them upside down and cut a small X into the bottom (not all the way through!) to create a little opening.

Make the Cream Cheese Filling

In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.

Fill the Strawberries

Spoon the filling into a piping bag or use a small spoon to stuff the cream cheese mixture into each strawberry.

Optional Toppings

Dip the tops into chopped nuts, or drizzle with melted chocolate.

Chill

Pop them in the fridge for 10–15 minutes if you want them a bit firmer and chilled.
