She has a background in print and television journalism and a degree in English and the History of Art from Trinity College.

In 2009 Nicole opened a boutique confectionary business, Pandora Bell, which sells high quality treats to speciality food shops.
Nicole produced and presented the documentary ‘A Strange Blessing' after winning a Commonwealth Broadcasting Association scholarship to attend a course in documentary production skills in India
The core of the training was to analyse diversity and conflict transformation. Nicole chose as her subject, India’s third sex, the Hijra. She absorbed herself in their life and culture and compared their sexual identities to those prevelant in the Western World.
