Convenience group Daybreak, which is operated by Musgrave, plans to invest €8.2m in its store expansion programme.
The investment will see the opening of 37 new stores around the country, adding to its portfolio of 300 stores now.
It will also support 500 new jobs, bringing the chain's total workforce to almost 4,700.
Daybreak sales increased by 15% last year compared to 2019 - the last non-Covid impacted year.
Thomas Morrison, Head of Retail and Musgrave MarketPlace said that as consumer demand for high-quality food-to-go increases, the company is responding by introducing new products.
"In particular, the market for evening meals is performing very strongly and we are responding with a new Daybreak own-brand meals solution which will enhance our offering and brand image," Mr Morrison said.
He also said the company is cognisant that these are challenging times, with increased living costs and rising inflation.
"We're continuously adapting to meet our customers' needs and give them the best possible value," he stated.
