Two Irish restaurants added to the Michelin Guide

Two Irish restaurants have been added to the Michelin Guide – Great Britain & Ireland, joining a host of Irish restaurants that have been recommended by the prestigious guide.

While coveted Stars, Green Stars and Bib Gourmands are only revealed once a year at the annual MICHELIN Guide Ceremon - which takes place in Dublin on 9 February 2026 - the inspectors travel the length and breadth of the countries to find new spots to add to the selection year-round.

These latest additions are released on a monthly basis, with this month seeing a total of 24 new additions.

Two of these new spots were Irish ones: new-to-the-scene Amai by Viktor in Dublin and the long beloved The Pullman at Glenlo Abbey Estate in Galway.

Located just off of Grafton St and opened only a number of months, Amai by Viktor has rapidly become one of the most exciting and innovative new restaurants on the scene, so it's not surprising to see it included in the Guide.

Founded by chef Viktor Silva - who had previously worked in Amuri, Bang and alongside Jordan and Maiken Bailey of Aimsir - and inspired by his upbringing in the favelas of Brazil, this restaurant is a love letter to the women who raised Silva, with unique takes on Brazilian recipes and Irish ingredients.

The Pullman, meanwhile, has long been a notable foodie destination, not least thanks to its design. The restaurant is located on tthe grounds of Glenlo Abbey Estate and is made up of two of the original carriages from The Orient Express, the luxury train.

As noted in the Guide: "The setting is indisputably wonderful, but it's the cooking and service that really make this such an impressive experience. Outstanding Irish ingredients are the bedrock, like Skeaghanore duck with preserved cherries, honey and tamarind.
