Each week on Donal's Meals in Minutes, Mr. Skehan shows us how to make hearty meals with simple ingredients mixed with store cupboard staples that will go down a treat with all the family.
We caught up with the fast-moving foodie to get his top tips for new parents who want to fit healthy food into their new - sleep-deprived - schedule. Watch the video above.
Meals in Minutes
Earlier this year, Donal and his wife Sofie became parents to baby Noah, something that Donal says has given him an even deeper appreciation for whipping up fast (but healthy) food.
"When Noah arrived, I understood the meaning of Meals in Minutes because I had a hangry [hungry-angry] wife, a hangry child and I didn't have time to be hangry so we definitely, all of a sudden, realised why Meals in Minutes was so important."
"The whole premise behind the show and the book is - there are 90 recipes, there are 15 minutes of prep and it's keeping things as simple as possible in order to get food that is actually tasty to the table."
Baby Nuclear Bunker
"Just before Noah was born, we created what I like to call the baby nuclear bunker which is basically your landing zone for when you come back from the hospital. You have this freezer filled with this lovely, tasty, food that you can just knock out and put in a pot and reheat.
"I didn't want to cook, she didn't want to cook and we just wanted comfort food so we spent maybe two or three weekends in the lead-up to Noah being born [prepping] and it really paid off. I don't think we had to cook for three weeks? Four weeks? It was really good."
Gnocchi Goodness
"Probably the one that is most popular with people who have cooked the recipes from the show and the book, is this garlic and rosemary chicken which is pan-fried with butter and then you add in cherry tomatoes and you shake it through until you make a rough tomato sauce.
Then, you add in the gnocchi and toss it all together and you've got this chicken-gnocchi-tomato thing which is just spectacular and feeds you for dinner - that's all you want."
