Each week on RTÉ Food, we meet one of the country's hard-working Irish food producers to see how they do what they do so well. This week, we're chatting to Kelly of Kelly Lou Cakes!

What is your food product?
We are a bakery that produces a range of cakes, cupcakes, cookies and sweet treats in a variety of different flavours. We specialise in celebration and wedding cakes.

How are they made?

We are a scratch bakery which means we bake everything from scratch, we don't use any cake mixes or cheat mixes. We use only the finest ingredients and as much Irish produce as possible.

When and how did you first come up with the idea for the product?

I started my business 4 years ago as a very small coffee corner in my parent’s hardware shop. I made some scones and a few cupcakes in a small domestic oven behind the counter. Out of the blue, the business just took off!

Our cupcakes were selling out every day and people started enquiring about ordering celebration cakes.

We very quickly outgrew our small space and a year later we made the cafe bigger and also opened a bakery around the corner with commercial ovens and equipment allowing us to keep up with the demand.

Who buys your products?

Everyone who likes cake! We have a very broad demographic of customers from the couple looking for their perfect wedding cake, to the birthday cake celebrations, the christening cake or the person who just wants a treat.

Where do you source your ingredients?

We try to buy all our ingredients from Irish suppliers and try to use as much Irish produce as possible. We only use Irish butter (no margarine) and local free range eggs in our baking.

Other than your own, what’s your favourite product?

I love all artisan-produced foods! I know how passionate small producers are about their product and try to support them as much as possible.

What is your view on ‘organic’ produce?

We try to keep our ingredients as pure as possible and we do use a lot of organic products, but we do have to factor in cost and some organic products are just too expensive.

Many food producers are very passionate about their products – have you a message you would like to share with your customers?

We put a lot of passion and hard work into all our cakes to make sure they are perfect for our customers. Not only do we like our products to look good, it is essential that they taste amazing - this is one of the most important things to us.

What would your death row meal be (aside from your own products!)?

Hmmmm that's a hard one... Anything with pasta or spaghetti! Carbonara, bolognese, Mac & cheese, pesto.....oh and of course garlic bread. And maybe a slice of chocolate cake after! It’s death row, calories don’t count!

Where can people buy your food and find out more about it?

All of our products are available from our cafe located in Portlaoise, Laois. You can find out more about us on our website or any of our social media pages, you can find us on Facebook, Instagram, Twitter, Pinterest and for bakery behind the scenes action follow our Snapchat @kellyloucakes.
