What is your food product?
Cookies and ready-to-bake cookie dough. Flavours include classics like chocolate chip, old fashioned oatmeal raisin and peanut butter chocolate chip along with exciting new cookies like sea salted caramel and toasted pecan, carrot cake cookie sandwich (winner of 2015 Great Taste gold star) and double chocolate porter.
We are constantly trying new flavours and cookie concepts. Our ready-to-bake dough comes in three flavours: Classic Chocolate Chip, White Chocolate & Cranberry and Oatmeal Raisin. We hope to expand the range in future.
How is it made?
We handmake each batch in our cookie shop in Dublin’s Liberties. Our signature recipies are based on ones that Jenny grew up baking in Boston, USA and the new flavours are a collaboration between Jenny, her partner Elaine and various Irish producers and collaborators. They are inspired by anything from seasonal produce to holidays.
When and how did you first come up with the idea for the product?
Jenny has been baking cookies since she was tall enough to see into the oven. Cookies are not a new product but American style cookies that are crisp on the outside and chewy on the inside aren’t easy to find in Ireland. Jenny and Elaine wanted to work together and run their own business and after some market research, Jenny’s passion for cookies seemed to be the right fit. Their ready-to-bake cookie dough was inspired by customers constantly asking how to bake the pair’s yummy cookies at home.
Who buys your products?
Our cookies are popular among the young professionals of Dublin as well as families and tourists who wander into our cookie shop. Our cookie dough customers are home bakers and those who want to be but don’t quite know where to start.
Where do you source your ingredients?
We source as many Irish ingredients as possible. Irish butter and eggs take Jenny’s American recipies to a whole new level. A few non-Irish exceptions include dark and white chocolate from Belgium and various dried friuts and spices from farther afield.
Does your product carry the guaranteed Irish label?
Not yet…
Is your product packaged in Ireland and is it recycled/recyclable?
Yes, we produce and package in our cookie shop in Dublin. All packaging is recyclable. Our cookie dough is packaged in glass jars that are also reusable.
Other than your own, what’s your favourite product?
We love Cornude artisan popcorn, Wood Key Brewing Pilgrim Red Ale and Bean & Goose Chocolate. There are so many exciting Irish producers out there today, it’s very difficult to choose.
What is your view on ‘organic’ produce?
We like to buy organic produce when we can but we don’t strive for an organic product range for our cookies.
Many food producers are very passionate about their products – have you a message you would like to share with your customers?
We love cookies and love to innovate. In our little cookie shop we spend hours mixing, creating and baking new recipies for the best customers in the world. We couldn’t imagine a better job.
How much salt and sugar is used and why? What is the shelf-life of your product?
We use both salt and sugar in our cookies. We consider them decadent treats to be eaten sparingly along with a healthy, balanced diet. We won’t serve out cookies after two days, though the shelf life is technically much longer. We give our cookie dough 10 weeks though, again, the shelf life is longer.
What would your death row meal be (aside from your own products!)?
Duck breast, scalloped potatoes and a caprese salad.
Where can people buy your food and find out more about it?
Our ready-to-bake cookie dough is available in select SuperValu stores in Dublin and Morton’s of Renelagh. Our cookies are availabe at our cookie shop The Dublin Cookie Company on 29 Thomas Street, Dublin, 8. We also stock freshly baked cookies in Fresh The Good Food Store (Smithfield) and supply a few cafes in Dublin including Clement & Pekoe and Klaw.
