You're on board to work with new EU co-funded Lamb - Tasty Easy Fun campaign - what excites you about it, food wise?
Lamb is exciting to me! It was more of a delicacy growing up in the USA. Even when I go back to America for visits, it's hard to find locally reared lamb, so it always feels really special, even decadent to prepare in my Irish kitchen!
What's your favourite lamb dish?
I love to simply marinate lamb chops in olive oil, sea salt, and rosemary overnight and then pop on the BBQ grill for supper the next evening.
Why do you think the Irish love their lamb so much?
The flavour of Irish lamb is really spectacular; it signifies a season and is sweet and rich because it is reared on grass and other wild herbs and flowers.
How does your food blog stand-out from the crowd and why do you think you were asked to come on board?
I think people enjoy the "armchair journey" of my blog, taking the leap from urban America to rural Ireland and all the food & farm stories that have accompanied my adventure.
