Bacon and cabbage is one of the most typically Irish meals going, so it's no surprise that Pat Whelan from James Whelan Butchers decided to develop a new cut of meat that takes ordinary-ol' bacon to the next level.
Their new Rack of Bacon has been dry cured to give mouth-watering flavour, and the fact that it's cooked on the bone means that moistness and flavour is conserved during cooking.
