Farmer Eddie O'Malley, with the help of his nine-year-old son Jack, decided to start making high quality pork products and sell them under the banner of their own names at the Westport Country Market. Three years later, Jack & Eddie's premium sausages and rashes are stocking throughout Connaught and Dublin, with plans to expand nationwide.
Eddie said of the brand: “On the farm, we believe that sausages and rashers are at the heart of Irish food. The farm is Bord Bia Certified and we complete the cycle on the farm, the piglets are born, reared and finished here before being sent to the factory, we then use lean cuts of pork to make the most delicious sausages.”
