Try our Neighbours' Nosh!
One of our closest neighbours in Europe is Wales. Welsh rarebit, also known as Welsh rabbit or Caws Pobi in Welsh, is a tradition dish from Wales that we think you will enjoy. It's kind of like a fancy cheese on toast, and despite its name there is no rabbit in it. Give it a try, it’s simple to make!
Ingredients - Serves 4
- 225g / 8oz low-fat grated cheddar cheese
- 1 tablespoon of low-fat margarine
- 2 teaspoons of Worcestershire sauce
- 1 level teaspoon of dry mustard
- 2 teaspoons of plain, white flour
- 4 tablespoons of semi-skimmed milk
- Ground black pepper to taste
- 4 slices of wholegrain bread, toasted on 1 side only
Utensils – Saucepan, wooden spoon
Method
- Put the cheese, flour, mustard, Worcestershire sauce, margarine, and pepper into a saucepan
- Mix well and then add the milk to moisten. Do not make it too wet.
- Stir over a gentle heat until all is melted, and when it is a slightly thick paste, stop stirring, and swivel it around the saucepan, which it will do quite easily
- Leave to cool a little, and meanwhile toast the bread on one side only
- Spread the rarebit over the untoasted side and brown under a hot grill
- This mixture can be made and kept in the refrigerator for several days if required
