What's For Dinner? A winter warmer chicken soup

In this episode of What's For Dinner? budding chef Thien invites us into his kitchen in Newport, County Mayo for a bowl of very special chicken soup.

He discovered the dish on holiday in North Macedonia with his family, on the breakfast menu of all places! Hearty, filling and delicious, this is the perfect soup to warm you up on a wintry day.

Soup isn’t something you expect to find on a breakfast menu in Ireland, but when Thien walked into a café in North Macedonia one morning while on holiday with his family, soup was the only option.

Curious to try, Thien ordered it and was blown away by how delicious it was. He politely asked for the recipe and before he knew it, he was in the kitchen being shown how to make it from scratch by the café owner.

Not only is the soup delicious, it’s a great recipe to practice some core cooking and food prep techniques, like chopping, dicing, sautéing, shredding and mashing!

It’s a lot of fun, but remember to have an adult helping out.

The finished product is half way between a soup and a stew – filling, tasty and packed with goodness. If you’re looking for a veggie or vegan option, you could use tofu instead of the chicken or even mushrooms for an extra earthy flavour.
