Saltfish Fritters are popular all over the Caribbean with many islands having their own variations on the recipe. They’re great to experiment with, you can add different herbs and spices to put your own twist on them.
Santis explains what Saltfish is and why it’s so salty, she also shares how to prep it perfectly so that it tastes just salty enough to make delicious fritters.

Eliza and Santis have the chats while getting the main mixture ready and share stories about juicy mangoes growing all over Montserrat, the difference between thyme and time and they even manage to have a sing-song too! Louis is chief taster and gives a massive thumbs up for these tasty bites.
If you can’t get saltfish, you can still make these using any flaky white fish like cod or hake, just bake it, flake it and off you go!
