From Glasson, the ‘Village of the Roses’, Westmeath, Eva is 23 and the eldest in her family. She attended school locally, and hockey provided an escape from academia as she played, coached and captained at school and club level.
An interest in people meant psychology was an obvious academic choice and she recently earned a first class honours degree from Trinity College Dublin. Now Eva plans to take a year out and consider her options.
Throughout college she waitressed in Grogan’s of Glasson and as a stewardess on a private yacht touring the Mediterranean. She also worked with the Trinity Global Relations Office on social media campaigns, while many summers in Italy increased her appetite for both food and travel.
Last summer she went to Thailand for several weeks and between Thai cookery courses, mud baths with elephants and scuba diving, it was her most memorable trip to date.
