Mashed Potatoes with Nutmeg

Cooking time: 25 - 30 minutes

  • 2.25kg | 5lb peeled, floury potatoes
  • 100g | 4oz butter
  • 275ml | half pint boiling milk
  • 1 level teaspoon nutmeg
  • salt and pepper
  • Bring the potatoes to boil in a saucepan of lightly salted water and boil for about 20 minutes, until soft. Drain thoroughly and return to the pan over a low heat for a couple of minutes, so that all the moisture has evaporated. Remove the pan from the heat and mash thoroughly, gradually adding the hot milk and butter. When the potatoes are mashed smooth, add the nutmeg, salt and pepper and mix in well. Keep hot in a covered serving dish until required.
